If you’re like Hunter and I, the frozen tuna steaks from HEB offer a 12oz portion size- perfect for our dinner, and affordable for great-tasting seafood (just under $6). Find them already vacuum sealed and frozen; when you need them, put them in the fridge on a plate (out of the vacuum seal) to thaw during the day and they are ready to cook that night!
1. The Veggies What you'll need: Any salad greens you enjoy Add in cabbage, carrots, radishes, cucumber, red onion, Cilantro, or anything else you enjoy! The tuna just takes a few minutes to sear so we start with the salad. To make the preparation easier, we use a fresh spring mix greens for the salad bed and top with a handful of chopped salad veggies that are pre-packaged; Our favorite to add is the Sesame Sweet Asian Chop salad package. |
2. The Protein What you'll need: Thawed tuna steaks Choice of herbs &/or seasoning non-stick cooking spray Once the veggies are assembled we prepare the steaks. I have found an herb crust with Colorado Spice Company that we love, but a simple mix of spices will do just fine to create a crust. I would recommend any mix of dried cilantro, parsley, oregano, garlic, lemon (juice or zest), salt and pepper for seasoning. You will want to generously cover both the top and bottom of each steak with the seasoning mixture. Next you will heat a skillet to medium-high heat. Use a touch of non-stick cooking spray and then sear each side of the steak about 3-4 minutes. Visually you will want to still have a ribbon of pink in the middle after each side has seared. |
3. Assemble it Together!
Here is where you will measure your portion size of tuna to top the salad you had made. We like to add a portion of lite champagne vinaigrette dressing for the fat serving. Other fat options to add in include feta cheese, guacamole, or sunflower seeds. Be creative and doll it up however you'd like!
If you're feeling fancy, set your table with a fun wine glass and enjoy your topo chico and a fresh squeeze of lime with your dinner.
